My alltime favourite is Ian Paice Deep Purple, i never tire of listening to him.
Many drummers i admire are the ones that are not too complicated but nail the drum part to suit the song. To name a few Roger Taylor Queen, Stan Lynch Tom Petty, Steve Ferrone Average White Band,Daryll Sweet Nazareth, Kenny Jones Who, Al Jackson jnr Albert King/ Stax,Kenny Aronoff J Cougar, Steve Jordan etc, etc.

Mine has to be Jon Theodore from The Mars Volta, he creates fantastic latin/rock/progresseive beats with huge sound, in different time signatures, it always seems to flow so great. He seems pretty underrated too

I'll go with Johnny Rabb,Marco Minnemann,JoJo Mayer,Bobby Jarzombek and Mike Mangini. There are other greats but these are the only five that I can say are completely flawless in thier playing.
