Wow, you're brave. I've heard of refinishing an old kit but I never would have thought about cutting the shells.
To answer your question, just mount heads on the pieces and see what they sound like. I've got some
Tama Imperialstars which don't have reso heads and they sound amazing. I prefer that punchy sound and they're way easier to tune with only one head! But maybe if the shell is too skinny you won't get a pleasing sound with only the batter head. I'd recommend a coated head that really rings.
