I love chicken so I say chicken thighs.

set the oven to 350 put aluminum foil in a metal pan, put the thighs in the pan cover with honey bbq sause pour in about just enough water to cover the bottom of the pan cover up with foil cook 1 hour make white rice and serve.

I eat this a lot at home and it is a great meal.

its making me hungry now

Don't know if you still need suggestions, but here's something very simple and very delicious. I'm afraid this isn't for the vegetarians out there....

1: Buy 4 chicken breasts. Nothing fancy, just plain, fresh chicken breasts. (With skin! Very important).

2: Go home because you probably can't start cooking chicken in a supermarket.

3: Put the chicken pieces in an oven-proof bowl and add generous amounts of olive oil, white wine vinegar (or just plain vinegar), salt, pepper, oregano, lemon juice and anything else you think will go really. Different herbs are good to add flavour.

4: Mix it all around so the pieces are nicely covered (they don't need to be submerged, by the way! I don't mean be that generous with the amounts).

5: Get your hands in there and peel the skin off , not right off- leave it attached, and get the mixture right under there.

6: Replace the skin and add a touch more salt.

7: Place in a preheated oven (medium to high heat) and cook until you think it's ready, basically. Every 10 minutes or so take them out and spoon the mixture plus juices over the chicken again.

8 (optional): at the end whack the oven to to high heat just to crisp up the skin.

Trust me, it's delicious. Serve with rice, pasta or salad. Or just solo, it's a great snack.

Hope that helps. If you're cooking for vegetarians I may have some suggestions too.....
